Anime created with creativity and passion ?

Let me explain what I mean by "creativity" and "passion".

I watched Detective Conan, Frieren, One Piece, Assassination Classroom, JJK, Demon Slayer, and finally my last one, DanDaDan. I'm new to anime...

I may be glazing DanDaDan a bit but I really loved the fact that animators could work like they wanted too ? (That's the closest thing I have in mind)

I'm really searching this kind of anime, interesting plot, nice mc, OST, interesting artistic choice, and character relations are very important also !

If you could explain why this anime that would be perfect !
