Internet/Hotspot help

So I am not tech savvy, and need some help. I'll be starting van life soon but I work remotely a 9-5. I need reliable internet. It doesn't need to be fancy, just consistent and not take ages to watch a YouTube video. No crazy upload or downloads. I'll also be staying in more remote places - blm, national forests.

I have an unlimited data plan with tmobile and the van I'm getting has a weboost. I don't want to use starlink for various reasons. I've seen some posts mention have two cellular data plans but I don't really get how that works. I'm assuming you don't need two phone? Can someone explain if they think that'd work and how 😅 thanks!
